The DS18B20 is ubiquitous in temperature monitoring: its 1-Wire bus chains many sensors over two or three wires, and it comes as a waterproof probe for liquids and outdoors. Configurable 9-to-12-bit resolution.
It's perfect for temperature networks (tanks, heating, cold chainCUse caseCold chainView profile) where simple wiring wins. It measures neither humidity nor pressure: it's a thermometer, but a good one.
